Most supermarket chickens are bred for speed, not taste. They grow rapidly, reaching market weight in just 35-42 days, resulting in soft, mild meat that’s more about efficiency than flavour. Aurum Poultry takes a completely different approach.

1. Slow-Grown for Deep Flavour
Aurum chickens grow for 100-120 days, nearly three times longer than standard broiler chickens. This extended growth allows them to develop stronger bones, firmer muscle, and richer, more developed flavour - what Asian cuisines refer to as ‘gai’, a deep, savoury taste that’s impossible to find in conventionally raised poultry.

2. High-Welfare, Low-Density Farming
Unlike conventional birds raised in overcrowded conditions, Aurum chickens live in low-density, climate-controlled sheds where they can move freely. This controlled environment reduces stress, ensuring better overall health and meat quality.

3. Inspired by Tradition
Aurum Poultry was founded by brothers Sam and Danny Wong, who grew up in Vietnam and longed for the familiar taste of the poultry they ate as children. Unable to find anything close in Australia, they set out to recreate that same depth of taste and texture, developing a slow-grown bird that delivers the prized ‘gai’ flavour found in traditional Vietnamese poultry.

In Australia, chicken is typically processed with its head and feet removed. But in many cultures, these are prized for their flavour, texture, and culinary significance. Aurum challenges this norm by selling birds whole, heads and feet intact - a sign of quality and authenticity in many Asian kitchens.
